Featured Recipe: Tombstones in the Cemetery

Ingredients:
  • 15 OREO Chocolate Sandwich Cookies
  • 3 cups cold milk
  • 2 pkg. (4-serving size each) JELL-O Chocolate Flavor Instant Pudding & Pie Filling
  • 1 tub (12 oz.) COOL WHIP Whipped Topping, divided & thawed
  • Creme Sandwich Cookies
  • Decorating gel
  • 5 candy pumpkins
  • 10 pieces of candy corn
Place all chocolate sandwich cookies in a food processor or blender to crush. If you don't have a food processor or blender, put cookies in a sealed Ziploc bag and roll over cookies with a rolling pin until finely crushed.

Add both packages of instant pudding into bowl filled with milk. Using a wire whisk, beat the milk and instant pudding mixture for 2 minutes or until well blended. Let stand 5 minutes. Next, lightly stir the 3 cups of the whipped topping and half of the crushed cookies into the instant pudding. Spoon mixture into a 13x9-inch dish; cover top with the remaining half portion of crushed cookies.

Put the dish in the refrigerator for at least 1 hour or until ready to serve. While dish is chilling, decorate the creme sandwich cookies with decorating gel to resemble tombstones. Just prior to serving, stand cookies up in top of dessert. Place pumpkins and candy corns around sandwich cookies on top of pudding and OREO mixture. Drop left over whipped topping by spoonfuls onto dessert to resemble ghosts. Store any surplus dessert back in the refrigerator.

Great Pumpkin Cake

Ingredients:
  • 1 pkg. of any flavor cake mix
  • 1 8 oz. pkg. of softened Philadelphia Cream Cheese
  • 1/4 cup (1/2 stick) of softened butter
  • 4 cups powdered sugar
  • Green, red and yellow food coloring
  • 1 regular ice cream cone (with flat bottom)
Make cake mix in 12-cup fluted tube pan as directed on package and bake. Cool in pan for 10 minutes. Take cake out of pan and place on wire rack to cool completely.

In a small bowl, beat cream cheese and butter with an electric mixer using medium speed until creamy. Once mixture is creamy, little by little add sugar, beating until light and fluffy after each addition. After the last of the sugar is added, remove 1/2 cup of the frosting and place in a small bowl. Add green food coloring to the frosting and stir until well blended. Use half of the green frosting to spread onto outside of the ice cream cone. Set cone and remaining green frosting aside for future use.

With leftover white frosting add red and yellow food colorings to tint it orange. Place cake, rounded-side up, on serving plate. Cover cake with orange frosting to resemble pumpkin. To create the pumpkin's stem, turn the ice cream cone upside down and place in the cake's hole on top. Using a pastry bag or plastic bag and cake decorating tip, pipe the reserved green frosting in vertical lines down the side of the cake.
